Cheesy Kimchi & Veg Puff Pastry
My friend from Boston has been in town visiting me in Los Angeles this past week, so I haven’t been doing too much cooking or content creating these days. No worries, it was nice to be present and not be on my phone all the time outside of when I needed to for work.
It’s been a couple of days since she’s flown back, and yesterday I ate through leftovers in the fridge. Yesterday morning on the other hand, I was feeling like I wanted to use the puff pastry in my fridge leftover from Friendsgiving last week and felt energized to record some content of me cooking.
I didn’t really know what I was making when I was going into it - I went live on TikTok, and knew I wanted the flaky bite of puff pastry, the sour funk of kimchi, and utilize the brussel sprouts and kale in some capacity, because that’s what I do.
Cheesy Kimchi & Veg Puff Pastry
Prep Time: 15 minutes | Cook Time: 15 minutes | Yield: 2 Servings
Ingredients:
1 sheet puff pastry
2 tbsp leeks
1 cup curly kale, chopped
2 brussel sprouts, chopped
1 shallot, chopped
1/4 cup kimchi, chopped
1 garlic clove, minced
1 tbsp kewpie mayo
1/3 cup shredded white cheddar
Preparation:
I took my defrosted puff pastry sheet and slightly rolled it out. Because the sheet was sitting in the fridge for a bit, I sliced off the dry portions. I cut two rectangles (roughly 2x3 inches) and then sliced an inner rectangle about 1/2 inch border
I placed my puff pastry blocks into the airfryer at 380 F for 8 minutes
After preparing the vegetables, mix the kimchi with kewpie mayo and a handful of cheddar cheese
On a pan (I used my carbon steel pan), add a bit of EVOO to coat the pan. On medium heat, add shallots, leek, then cook shallots until translucent. Add garlic, kale, and brussel sprouts and season with s+p
Add kimchi/kewpie/cheddar mixture into skillet and fully incorporate with veg
Remove the puff pastry and press down the inner rectangle to create a “boat”
I added a little bit of kewpie in the center of the puff, then add veggie mix onto puff pastry. Top with additional shredded cheddar
Airfry puffs at 400 F for 3 minutes
Top with chives (which I cut with kitchen shears naturally) and enjoy
